Five different grape varieties for Pardusco

For this delicious red wine, he uses no fewer than five different local grape varieties, including Alveralhão, Pedral, and Caínho. The grapes come from Monção in the north and the Lima Valley, on the western side of Vinho Verde. The wine is made by first cold macerating on the skins to enhance its color. After slow fermentation at a low temperature, it is aged in used barrels, which once held Alvarinho, combined with micro-oxygenation to soften the tannins.
