The origins of the Pascal Jolivet winery

Pascal Jolivet is a major player in Sancerre and also owns several vineyards in Pouilly Fumé and Touraine. The wines from this estate are pure and beautifully balanced. The winemaker grew up as the son of the cellar master of Château de Tracy in Pouilly Fumé. Winemaking was instilled in him from an early age, and he wanted nothing more than to do the same when he was old enough. Thus, his Pascal Jolivet estate was founded in 1987. He has most of his vineyards in Sancerre, eight hectares in Pouilly Fumé, and now also fifty hectares in Touraine.

The Attitude line by Pascal Jolivet

Pascal Jovlivet has been working on the Attitude line since 2001. The idea was to create a high-quality Loire Valley collection, not specifically from the Sancerre region, but from the Loire Valley, the world's finest terroir for the Sauvignon Blanc grape. Pascal Jolivet's dedication to this grape led him to a region rich in history and heritage, near the magnificent châteaux of Cheverny and Chambord. The vineyard consists primarily of five plots and has been expanded since 2016 to cover thirty hectares of limestone and flint. Attitude is the result of this reflection and the natural expertise of Pascal Jolivet Domaine. His identity and originality give these Pascal Jolivet wines a unique style. The soil is rich in clay and limestone, giving this characterful red wine its spicy notes. The grapes are hand-harvested, and after a cold maceration of at least fifteen days, fermentation begins for twelve to fifteen days. Ten percent of the wine is then aged in new oak barrels, while the remaining ninety percent is aged in stainless steel. This results in a brilliant wine. Attitude Pinot Noir has a ruby ​​red color and elegant aromas of red fruit and berries. The palate offers spicy notes and a good balance between the red fruit and oak.
