The passion of the Pasqua family

Pasqua's story began in 1925, when the Pasqua family decided to transform their passion for the Valpolicella grape into a winery. The grapes for this wine are carefully selected from Pasqua's vineyards, focusing on indigenous Corvina, Rondinella, and Corvinone grape varieties. After being harvested by hand, the grapes are dried on traditional wooden racks, concentrating and ripening them. This process, known as appassimento, gives the wine its characteristic flavor and complexity. After fermentation, the young Valpolicella wine is transferred to the dried grape skins of the Amarone grape family, where it undergoes a second fermentation. This allows for further extraction of color, aromas, and tannins, giving the wine greater depth and structure.
