Grapes from Limoux
This delicious sparkling white wine is made from Chardonnay, Chenin Blanc, and Pinot Noir grapes, all grown in the beautiful Limoux region. This region imparts great strength and character to the grapes. The subsoil on which the old vines are planted is rich in calcareous loam and gravel. The long, ancient roots allow nutrients to be absorbed deep into the soil. The climate here is perfect for these grapes, with ample sunshine alternating with the refreshing coolness of the mountains and the night. At the right ripeness, the grapes are harvested mechanically and then transported to the winery. Here, the bunches are spread out on large sorting tables for a final selection. This ensures that only the finest fruit is selected for pressing. The final result is phenomenal.
