Waterkloof is situated on the slopes of Schapenberg in the Helderberg Mountains. Besides producing wines under its own name, they also produce a number of wines made from grapes from another vineyard, better known as Peacock Ridge. This series of high-quality wines pays tribute on the label to the many peacocks found along the vineyards.
The ideal conditions for Merlot grapes
The Merlot grapes are grown on the slopes of the Helderberg Mountains in South Africa. At an altitude of 100 to 290 meters above sea level, the grapes enjoy a moderate temperature in the vineyards. This temperature is conducive to ripening, giving this Wild Ferment Merlot its unique character. The soils are of sandstone origin with medium-sized stones, which help both drain and retain moisture. The Merlot grapes are given ample time to ripen and are regularly tasted during the harvest to ensure they are optimally ripe for harvest.
The harvest is entirely by hand. After harvest, the grapes are rigorously inspected and selected. The whole bunches are destemmed and fermented in wooden fermenters. During fermentation, gentle punch-downs are performed twice a day. After fermentation, the wine remains on the skins for 30 days to develop the tannins and beautiful color. This is followed by natural malolactic fermentation in barrels. The Wild Ferment Merlot is aged in French barrels for nine months.
What does Peacock Wild Ferment Merlot taste like?
The result is a stunning wine. Upon pouring, it releases delicious aromas of blackcurrant, plum, smoke, and spice. On the palate, this red wine is elegant with dark black fruit, a touch of mocha, and licorice. It has seductive tannins that balance it beautifully. These flavors continue into the long, complex finish.
