Slow maturation process for Sauvignon Blanc
The vineyards where the Sauvignon Blanc is grown are located in the cool Schapenberg district, on the outskirts of Stellenbosch and close to the coast. This location is considerably cooler than the rest of Stellenbosch. Thanks to the cooler climate, the vineyards ripen more slowly, resulting in a natural concentration of flavors. The wines from this region all have a long, distinctive finish. This wine is named after the colorful peacocks that can be found around the vineyards.
The grapes are tasted regularly throughout the season to determine when they have reached their ideal ripeness. At peak ripeness, the grapes are harvested by hand and pressed whole bunches. Only the finest juice is selected from the press, which then flows into the tank via gravity. The juice is then fermented with wild yeasts, allowing the flavors of the vineyard to be expressed in the wine. This fermentation lasts over two months and then remains on the lees for at least another two months before bottling.
