 The Austrian winery Pfaffl is a hit with many. With their wide range of wines, they have conquered the world. Roman and Adelheid Pfaffl's adventure began with a 0.75-hectare vineyard and has grown to 110 hectares in 40 years. This gives them a wide variety of soil structures and climates. The Saint Laurent grapes ripen in a climate of warm days alternating with cool nights. This allows the grapes to ripen evenly and time to do so. The grapes are carefully harvested, destemmed, and pressed in the winery. The resulting must is transferred to stainless steel tanks where fermentation takes place at a controlled temperature. During these 21 days, the must is continuously pumped over. After fermentation, the wine is stored in used oak barrels where it ages for six months.
