This ensures even harvest growth, and the bunches retain their natural freshness. The soil structure is remarkable, rich in clay and limestone, giving the grapes ample strength. Once the harvest is ripe and the bunches have absorbed all the richness of the soil, they are harvested. This always takes place early in the morning to protect the grapes from oxidation and bruising.
