Wood aging for the Philibert du Charme Chardonnay
The Chardonnay grapes for this white Philibert du Charme variety enjoy abundant sunlight, but also the cool breeze. This fresh breeze cools the harvest and contributes to the even growth of the bunches. The strong soil structure supporting the old vines provides the harvest with abundant richness and the right conditions for large-scale growth. At ideal ripeness, the bunches are harvested and taken directly to the Philibert du Charme cellar. Here, the bunches undergo a rigorous selection process, after which the wine matures for a full eight months in oak barrels. The result is a truly full-bodied Chardonnay.
