The organic wines of Pizzolato

For over five generations, the Pizzolato family business has been fully committed to producing high-quality wines. They own approximately 58 hectares of vineyards, working closely with local producers. Since 1985, the winery has focused entirely on organic farming and is even certified for it. All their wines are made from organically grown grapes. These grapes are grown in the north of Treviso, on the beautiful hills of the DOC region. The entire vinification process is carefully overseen by owner Settimo Pizzolato. His team ensures that high-quality organic wines are produced, which are also incredibly flavorful. They produce not only sparkling wines but also still red and white wines. The Pinot Grigio grapes are carefully and selectively harvested at peak ripeness. At the winery, the pressed juice undergoes fermentation in steel tanks, focusing on extracting the flavors and aromas. Alcoholic fermentation follows, after which the wine remains in contact with the yeasts for some time to further extract the aromas. This sur lie aging lasts several months and is only separated from the yeast after extensive testing. After this ideal period, the wine is bottled.
