This beautiful white wine from Plaisance will soon be changing its name to Pascaline. The wine itself remains unchanged, but the label has been updated with a new and more modern look. Plaisance, one of the best-selling wineries in the Pay's Doc, is no surprise to us! J. Plaisance is a winery with deep roots in the Pay's Doc. This beautiful winery is located between L'Aude and the Hérault. The founder of the winery, J. Plaisance, wanted to limit himself to producing two wines: a red and a white. With this in mind, he wanted to create delicious wines suitable for everyday use while still giving his full attention to the vineyards. Well, he succeeded!

The Pascaline vineyards for Chardonnay and Viognier

The vineyards for this Plaisance Chardonnay Viognier have an average age of 25 years. This allows the plants to be deeply rooted in the rich soil and draw sufficient nutrients and moisture from it. The Chardonnay grapes are planted on two south-facing slopes. This orientation allows the grapes to receive sufficient warmth from the glorious sun, while the altitude provides a pleasant coolness in the evening and night. The Viognier grapes are planted higher on the slopes because they require more freshness than Chardonnay. When the grapes reach perfect ripeness for this delicious white wine, the harvest begins early in the morning. This is done entirely mechanically. Once they arrive at the press, the grapes are carefully sorted on sorting tables to ensure only the best are pressed.

The taste of the Pascaline Chardonnay Viognier

Finally, it's time to taste this gem. Upon opening the bottle, the senses are immediately awakened. Once poured, we see the beautiful pale gold color with a summery shimmer. It almost feels like the southern French sun is shining in the glass. On the nose, we noted aromas of yellow and tropical fruit, spring blossom, and a soft hint of hazelnut. The taste—what a delicious white wine! Pleasantly mild with a fresh character, revealing hints of apricot, apple, and a refined undertone of almond. The long, smooth finish, with a pleasantly refreshing note at the end, makes this wine a winner!
