Poitout Winery was founded in 2003 by Chaterine and Louis Poitout. They both grew up in Chablis, and winemaking has always played a significant role in their lives. In just twenty years, they have built a substantial winery from scratch. The Poitout estate now encompasses some 18 hectares of vineyards, some of which are even classified as 1Cru Burgundy.
 Poiout is a fusion of vineyards from each half of the Poitout family. Catherine, for example, brought in the vineyards in Chablis and Lignorelles. The vineyards in Maligny and Villy originally belonged to Louis Poitout's father, Michel Poitout. To further enhance the Poitout estate's prestige, they jointly purchased the vineyards in Fleys. This unique combination has allowed Poitout to develop into an impressive winery.
