This wine marks the beginning of winemaking by winemaker and founder Jose Maria Toro Albala, who began producing wine in Lagar del Carmen in 1922. An old Amontillado wine, made from 100 percent Pedro Ximenez grapes, it is a unique wine with great complexity, resulting from its long aging. Deep, intense, and with a very long finish.

The success of Toro Albala

The Toro Albala family business has a long history, beginning in 1922 with a small-scale winemaker named Jose Maria Toro Albala. Their wines are found in restaurants worldwide, but in the early years, their success was highly doubtful. Toro Albala began producing wines for long-term aging, intending to create more elegant wines. At the time, however, this was a significant risk due to the economic crisis. But courage and passion brought this bold idea to great success. They now specialize in the Pedro Ximenex grape variety. The grapes form the foundation and are therefore given ample time to develop their characteristics in the vineyards. At peak ripeness, they are harvested by hand. This is followed by a prolonged aging process, with the first 10 years spent in American oak barrels. This process gradually removes the foam, after which it's time for the next aging process. This lasts a full 25 years, giving the wine a darker color and changing its concentration and complexity.

This Amontillado appears amber in the glass. As it dances in the glass, copper hues also sparkle. The aroma unfolds and is best described as intense and spicy. Beautiful oak notes emerge, with soft fruity notes in the background. The palate is dry and sharp with mineral notes. The finish is long and bitter, again with oaky notes. An exceptional glass of wine that pairs well with game and meat dishes.
