Bodegas Toro Albala was founded in 1922 and immediately focused on producing high-quality fortified and liqueur wines. The Pedro Ximenez grape was central from day one. At peak ripeness, the Pedro Ximenez grapes are carefully harvested and taken directly to the winery. After rigorous selection, they are aged for 15 years using the criaderas and solera system. This centuries-old method involves stacking several barrels horizontally. The top row holds the youngest wine, and the bottom barrels the oldest. Throughout the year, wine is drawn from the bottom barrels and bottled. The drained portion is then replenished with the wine from the top. It's a lengthy process, but it allows the winemaker to create a truly special wine.
