The Cortado en Rama is a special wine with an even more special character. This wine from Bodegas Toro Albala is truly unique. It's aged in special Fino casks, or barrels previously used to age sherry. This allows the wine to develop distinct aromas and flavors. And that 25-year aging process is more than worth the wait.
25 years of aging for Poley Palo Cortdo and Rama
The Toro Albala winery, named after its founder, was established in 1922 in the Montilla Moriles region. It was the first winery to sell sweet dessert wines. Approximately 30 percent of the grapes come from their own vineyards, with the remaining 70 percent coming from partner growers. The wine cellar, with approximately 6,000 barrels, is located in the underground tunnels. They are experts in the Pedro Ximenex grape, which also plays a key role in the wine.
The grapes are harvested at peak ripeness and taken almost immediately to the winery. Here, a rigorous selection process takes place, leaving only the finest grapes. The winemaking process is as unique as the wine itself. It is aged in Fino barrels, giving this wine a completely different aging process. The aging process lasts for a full 25 years.
An elegant wine from Toro Albala
The result is an amber-colored wine with beautiful greenish hues. The aroma is intense and jumps immediately from the glass. We note tobacco, wood, and spices like pepper and cloves. These aromas are complemented by the warmer notes of walnut and hazelnut. The palate is initially dry and full-bodied. The acidity balances everything out, giving way to some salty notes. A beautifully elegant wine that pairs perfectly with meat and game dishes.
