When Cielo's expert winemaker deems the grapes ripe enough, the harvest can begin. This takes place exclusively at night, when the Sauvignon Blanc grapes are still pleasantly fresh. After fermentation, the juice is left to age briefly on its own lees, which adds the necessary complexity. The result is fragrant tomato leaf, delicate Italian herbs, and invigorating citrus notes.
