The grape's unique aromas are due to the area's unique soil type. The soil consists of clay with intensely white chalky soil. This creates special characteristics characteristic of this region. Furthermore, the vineyards are situated at an altitude of 250 to 300 meters. This, combined with the fresh breeze from the nearby Ligurian Sea, ensures a stable temperature.
The Cortese grapes are harvested by hand when fully ripe. Almost immediately, they are transported to the winery where they are destemmed and gently pressed. Fermentation follows, lasting approximately 20 days at a controlled temperature. This fermentation takes place entirely in stainless steel vats. The wine is then aged on the lees for another three months, giving it a softer character and some structure.
