In 2008, Myndert Pon, founder of Bodegas Salentein, visited the Pedernal Valley in San Juan and was inspired by its stunning beauty, untamed nature, and diverse terroir. This inspiration, along with his vision to showcase the Pedernal Valley's excellence, led to the creation of Pyros Wines, the first world-class wine collection reflecting the Pedernal Valley's unique terroir.
Pyros is an outstanding collection of unusual and exclusive wines from Argentina. All the grapes for these wines come from the exclusive Pedernal Valley, a deep and isolated canyon nestled in the stunning foothills of the Andes in San Juan Province.
Twelve months of wood aging for this Malbec
Thanks to the ideal climate, beautiful Malbec grapes are produced, hand-picked and rigorously selected. The grapes undergo a cold maceration at ten degrees Celsius for 72 hours. Fermentation then follows at a controlled temperature of 23 degrees Celsius, with the skins that float to the surface being immersed daily. Finally, maceration takes place after fermentation, with a total maceration period of approximately 28 days. The wine is then transferred and aged in oak barrels for twelve months.
Winemaker José Morales creates an incredibly beautiful wine. The aroma is rich with notes of black fruit, spices, vanilla, tobacco, oak, and a hint of plum. The palate is complex and full of intense blackberry, plum, and cherry flavors, complemented by earthy notes and vanilla. On the back of the palate, this Pyros Barrel Selected Malbec has nuances of oak, tobacco, and a hint of smoke. A fantastic glass!
