What does the Ramon Bilbao Verdejo Rueda taste like?
All grapes come from vines over twenty years old. Harvesting is carried out entirely at night due to the lower temperatures. Harvesting is entirely mechanical. After crushing, the must is cooled, and gravity is used for the first clarification. Fermentation begins about two days later, with controlled temperatures and strict hygiene throughout the entire process. Harvest season can be very warm, so the grapes are picked early, while the cool night air still lingers between the Verdejo vines.
