Vineyards and region
The grapes come from Spain, Castilla y León, DO Rueda. The vines at Finca Las Amedias are over 20 years old and are located at an altitude of 770 meters on poor, gravelly soils with little organic matter. These stony soils create an airy structure and rapid water drainage, allowing the grapes to ripen concentrated and healthily.
Vinification and maturation
After rigorous selection, a cold maceration of the skins takes place for 8–10 hours at 6°C in an inert environment. Alcoholic fermentation takes place at 16°C in concrete tulip vats. The wine is then aged in barrels on its fine lees with weekly bâtonnage. The entire maturation lasts 8 months in a mix of French and Hungarian oak.

Light and bright greenish-yellow. The nose is citrusy with balsamic notes of sandalwood and mint, followed by hints of white chocolate and pastry. The palate is smooth and precise, with fresh acidity, a creamy texture, and a spicy note of white pepper on the finish. A strong pairing with pasta, risotto, and oily fish.
