The perfect characteristics of Rathfinny Blanc de Blancs
Rathfinny Blanc de Blancs is born from the unique terroir of the Rathfinny Wine Estate, which offers an ideal environment for cultivating sparkling wines. Situated on a picturesque estate with thin clay-loam soils atop chalk, the vines benefit from excellent water resources, which contributes to the healthy growth of the grapes. The region's semi-continental climate, very similar to that of Champagne, adds another dimension to the exceptional conditions for growing these grape varieties.
The grapes for Rathfinny Blanc de Blancs are harvested by hand with the utmost care. They are then pressed as whole bunches. The wine then undergoes fermentation in stainless steel tanks at a controlled temperature of 16 degrees Celsius. This is followed by malolactic fermentation to enhance its complexity. After bottling, the wine is allowed to mature, resting on the lees for a full 36 months. This prolonged contact with the lees contributes to the wine's complexity.
