Long-term maturation for Rathfinny Blanc de Noirs

Rathfinny Blanc de Noirs is an enchanting sparkling wine originating from the vast Rathfinny estate, where the conditions for growing sparkling wine grapes are perfectly combined. Situated on thin clay-loam soils over chalk, the estate offers fertile soil and excellent water resources for the thriving vines. The semi-continental climate, very similar to that of the Champagne region in France, adds an extra dimension to the unique environment in which this wine flourishes. The grapes for Rathfinny Blanc de Noirs are harvested by hand and then undergo a careful vinification process. Whole-bunch pressing and minimal intervention help preserve the purity of the fruit. The base wine undergoes fermentation in stainless steel tanks at a controlled temperature of 16 degrees Celsius, followed by malolactic fermentation for enhanced complexity. After bottling, the wine is aged on its lees for an impressive 36 months. The result is a Blanc de Noirs of exceptional quality.
