Rathfinny was founded in 2010 by Mark and Sarah Driver and has since grown into a leading family business. The first vineyards were lovingly planted in April 2012, and since then, Rathfinny has developed into a wine estate of over 93 hectares in the picturesque South Downs, just three miles from the English Channel. Situated on a south-facing slope, Rathfinny's vineyards exude the character of the region, planted primarily with the noble grape varieties Pinot Noir, Chardonnay, and Meunier. They also own small parcels of Pinot Blanc and Pinot Gris, allowing Rathfinny to embrace a rich diversity of grape varieties.
Rathfinny Classic Cuvée Brut is a beautiful house-style sparkling wine from the renowned Rathfinny estate. The vineyards are situated on an ideal south-facing slope, sheltered from the southwesterly wind. The soils consist of salty clay loam and limestone and are permeable, just like those found in Champagne. At peak ripeness, the grapes are harvested entirely by hand and whole-bunch pressed in the winery. The base wine is fermented in stainless steel tanks with select yeasts. The wine then undergoes an impressive 30 months of bottle aging.
