A top producer in Roussillon
The renowned family-run Cazes winery is a leader in biodynamic viticulture and is one of the top producers in Roussillon. They own 220 hectares of vineyards, which produce no fewer than thirteen different wines annually. The vineyards are bordered by the Mediterranean Sea to the west, the Pyrenees to the south, and the Corbières hills to the east. The Cazes region is ideally situated at the intersection of the terraces of the Agly Valley and the sediments of the Reboul River. Syrah, Grenache Noir, Muscat d'Alexandrie, and Mourvèdre are the most common grapes in the Domaine Cazes vineyards. Cazes Rivesaltes Grenat is a sweet dessert wine made entirely from the Grenache Noir grape. This type of sweet wine from Rivesaltes is called "vin doux naturel"—natural because no sugar is added. Halfway through fermentation, the process is halted by adding a dash of brandy to the must. This leaves unfermented grape sugars, which sweeten the wine.
A traditional vinification for the Rivesaltes Grenat Rouge
After the harvest, traditional vinification follows, with fermentation at 28 degrees Celsius and a week of maceration. Finally, the wine is aged for almost a year in oak barrels. This special production process gives Cazes Rivesaltes Grenat intense aromas of wild strawberries and red fruit, with an elegant style. Despite its 110 grams of residual sugar per liter, the wine is not heavy. The flavor is rather opulent, intense, and sweet. This sweetness allows the wine to age for a long time. They are indestructible! Cazes Rivesaltes Grenat is especially fantastic with red fruit sorbets and strawberries, but also tastes wonderful with chocolate desserts!
