Saint Colias is a French wine series produced by the renowned Les Vignerons du Narbonnais winery. This winery has been operating for over 85 years and is a cooperative of 330 local winegrowers from the region around Narbonne. The cooperative's vineyards encompass a total area of ​​over 1,500 hectares, ensuring an inexhaustible supply of grapes and allowing the winemakers to select the finest bunches for the production of Saint Colias Chardonnay. Thanks to modern equipment, the cooperative can produce wine on a large scale without compromising quality. The grapes are harvested entirely by hand, with only the finest grapes being selected. They are then destemmed and crushed to release the juice. The juice is transferred to stainless steel tanks for fermentation. Fermentation takes place at controlled temperatures to ensure the wine's flavor and aromas develop optimally. After fermentation, the wine is transferred to oak barrels for further aging.
