The ideal climate for Sallier de La Tour
The Regaleali vineyards are nestled in the heart of the Sicilian hills. At first, you might expect a dry environment, but nothing could be further from the truth. The estate covers 500 hectares, with 320 hectares reserved for vines. A unique irrigation system provides the essential water. This is the only way grapes can be grown here. This success is partly due to the altitude of the vineyards. Nights don't cool down by the sea, while high in the mountains it's a completely different story. At an altitude of 450 to 700 meters above sea level, the nighttime temperatures are pleasantly cool. This allows the grapes to develop distinctive fruity aromas.
Manual harvest for Sallier de La Tour Grillo Sicilia
This crisp white wine is made from 100 percent Grillo grapes grown in the Sallier de la Tour vineyards in Monreale, near Palermo. After being harvested by hand, the grapes are traditionally vinified in stainless steel vats at a controlled temperature of 16 degrees Celsius without malolactic fermentation. The wine then remains on the fine lees for four months before bottling.
The Grillo Sicilia shines in a light straw yellow with greenish reflections. The bouquet smells of citrus, green apple, and peach. On the palate, Sallier de la Tour's Grillo is very fresh, aromatic, and persistent with good minerality, lightness, and a lovely finish. A very interesting white wine with a wealth of flavors! Delicious with goat cheese or light fish dishes.
