Once the grapes have reached optimal ripeness, they are harvested by hand with the utmost care. The harvest begins with the Negroamaro grapes, followed by the Primitivo and Malvasia Nera. Each cluster of grapes undergoes a thorough inspection, as only the very best bunches will ultimately make it into the Gran Trio Rosso. The grapes are carefully collected into small crates, ready to be transported to the press in San Marzano. Upon arrival at the winery, the grapes are gently pressed, releasing the deep black juice into the barrels. For the aging of this Gran Trio, San Marzano uses French oak barrels, where the wine rests for four to five months. This period is crucial for the Gran Trio Rosso, as it allows the wine to develop its rich flavors and develop into a velvety smooth wine.
