The ideal conditions for Savian wines
Savian's adventure began in 1925, just after the First World War, when the founder of this winery acquired a small four-hectare farm. It has since grown into a substantial estate of 42 hectares. The vineyards enjoy the perfect climate between the Livenza and Tagliamento rivers, where the provinces of Venice, Pordenone, and Treviso meet. The grapes ripen perfectly here, resulting in fine wines. Since 1993, the winery has been fully organic, based on the belief that a good product must be of high quality but also protect the environment. This is achieved through continuous improvement and innovation.
The climate is ideal for Pinot Grigio grapes. The clusters develop well in the fluctuating temperatures between warm and cold. This allows the grapes to ripen quickly and maintain their pleasant acidity. Once in the cellar, a strict selection process takes place to ensure only the finest grapes are bottled. The grapes are then cooled and macerated on the skins. The wine ferments for several months at a controlled temperature to preserve all its aromas. The entire vinification process is closely monitored, allowing for adjustments to be made at any time.
