This beautiful Sauvignon Blanc comes from the Touraine region in the heart of the Loire Valley. The 25-year-old Sauvignon vines are deeply rooted in clay and sandy soil. Combined with the ideal climate, the grapes can develop beautiful characteristics, ultimately resulting in this aromatic white wine with a delightfully fruity character.

High quality of Domaine des Souterraines

In 1820, the des Souterrains estate was founded in the heart of the Cher Valley. They own approximately 23 hectares, where they cultivate with great respect for nature. Today, Nicolas Mazzesi and his wife are at the helm. They understand better than anyone how to manage the high quality and strong potential of their vineyard. They then decided to elevate it to the highest quality level. For 10 years, they worked tirelessly on their estate, from the vineyard to winemaking and aging. It's no wonder their wines are featured in many renowned restaurants. The grapes are carefully harvested at peak ripeness. They are then taken almost immediately to the winery. Here, the grapes are pressed and sorted by hand. The vinification process is traditional. After pressing, there is a cold settling period of about a week. This is followed by fermentation at a temperature of 14 to 18 degrees Celsius for 20 days. The temperature is monitored daily. Finally, the wine is transferred to stainless steel tanks for aging.

The aroma and taste of Souterrains Touraine Sauvignon

The Souterrains Touraine Sauvignon is a pale gold in the glass with occasional green hues. The aroma is vibrant with fruity and floral notes. Granny Smith is clearly evident with aromas of wild peach. The fruit continues on the palate with light citrus aromas. The refreshing freshness and structure of the Sauvignon give it a full bodied finish. Perfect as an aperitif, it also pairs well with various dishes such as fish, seafood, and goat cheese.
