The vineyards of Stemmari
Stemmari boasts an impressive 700 hectares of vineyards in Sicily. Because they have so many fields, they can carefully select which grapes yield best in a particular location. The Grillo grapes grow in the southeast, near the town of Acate. Here, the Stemmari Grillo grapes receive plenty of sun, often slightly more than in the north. The soil is characterized by sand and some clay, which helps the Grillo retain its freshness. Harvesting is done entirely by hand, allowing for stricter selection of the Grillo grapes. After fermentation, Stemmari Grillo is aged for another five months in stainless steel tanks.
