Fortunately, San Marzano also has several vineyards around Manduria, from which this perfect wine is made. Harvest usually takes place in the second week of September, giving the grapes plenty of time to ripen. After harvest and vinification, the wine is aged in French and American oak for a full 12 months in San Marzano's cellars. This is followed by a period of bottle aging before it makes its way here.
