The vineyards for this wine are located on the Bocca di Lupo estate at an altitude of 820 meters. The vineyards are all certified organic, with the vines nourished by the chalky soil. Tormaresca's dream was to revive and rediscover the noble and understated Aglianico grape. The project took years, but here we have the result. The mature vines have produced concentrated grapes that proved perfect for this intense, rich, and full-bodied wine.

Manual harvest for Tormaresca Bocca di Lupo

In the far south of Italy, in the heel of the boot, lies the Tormaresca winery. Winemaking is booming here, thanks in part to the renowned Antinoria family. They have applied their expertise in the region, resulting in superb wines in a very short time. They own 500 hectares in Puglia's most important wine regions. Their wines are praised both nationally and internationally for their unparalleled quality, and as a result, they regularly win awards. The Aglianico grapes are harvested entirely by hand and taken directly to the winery. Here, they are selected on the sorting tables, where only the finest grapes are good enough. The grapes are destemmed and transferred to stainless steel vats for alcoholic fermentation at a controlled temperature. Maceration on the skins then lasts 15 days with regular pumping over. This process focuses on achieving the finest color and intense aromas. After fermentation, the wine is transferred to French oak barrels where malolactic fermentation first takes place. The wine then ages for several months in the same barrels and then for another year in the bottle.
