Torres San Valentín Parellada Sémi-Dulce is not a wine named by chance. This wine was created in 1956 by Miguel Torres Carbó , a key figure in the Torres Family at the time, as a personal gift for his wife, Doña Margarita Riera . Intended as a declaration of love, the wine was released on February 14th , which immediately explains its name and character. Those romantic origins remain at the heart of this wine today, making San Valentín one of Torres' most recognizable and emotive cuvées.
Vineyards and region
The grapes come from Spain, from Catalonia, where Parellada is traditionally grown in relatively high-altitude vineyards. This location ensures cooler nights and a slower ripening process, allowing the grape to retain its fresh acidity and refined aromas. The Torres family has worked here for generations and has a deep-rooted knowledge of the local grape varieties. This expertise is evident in San Valentín, a wine deliberately elegant and light-hearted without losing its identity.
Vinification and maturation
The vinification process is entirely focused on softness, balance, and aromatic purity. Fermentation takes place at a controlled temperature to maximize the fruity and floral character of Parellada. Fermentation is stopped prematurely, leaving a natural residual sweetness that gives the wine its semi-dulce style. There is no oak aging, a deliberate choice to keep the wine fresh, supple, and immediately accessible. Everything is geared towards creating a wine that feels light, yet remains technically tight and pure.

This wine is made from 100% Parellada. Parellada is a grape known for its fresh acidity, subtle fruit expression, and refined aroma. In this style, it produces a soft, slightly sweet wine with an elegant structure.
Tasting notes and serving suggestions
The color is bright light yellow. The nose reveals fresh notes of apple and pear, complemented by floral accents. On the palate, the wine is soft and supple, with a light sweetness beautifully balanced by crisp acidity. The mouthfeel is round and friendly, without being heavy or cloying. The finish is fresh and smooth. Serve this wine preferably at 8–10°C (46–50°F). It works well as an aperitif and also pairs well with light dishes, mild cheeses, and fruity desserts.
