Ice wine. Wine made from frozen grapes. They must be picked and processed while frozen. In Austria, as in Germany, the must weight must be at least equal to that of a Beerenauslese, and the grapes must be picked from the vine. This is a risky process, as only about 10% of the initial quantity of grapes reaches the bottle as wine.

The grapes grow on sandy and black earth soils. The grapes are taken to the press as soon as possible after being harvested by hand. Here, they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the Gelber Muskateller Eiswein can continue to harmonize on the fine yeast for several months.
