The old Palomino vineyard of Valdespino
The vineyard for this Inocente Fino Sherry is located five kilometers northwest of the city of Jerez, in the heart of the Alto Jerez region. It's filled with the Palomino grape, which thrives there. At an altitude of 135 meters above sea level, the bunches receive ample sunlight but also plenty of coolness. This results in a consistent harvest with full, firm bunches. The chalky soil imparts a beautiful salty aroma and flavor, which, combined with the twenty-five-year-old vines, completes the picture.
The aroma and taste of the Valdespino Inocente
After the harvest is brought in, fermentation and aging takes place in oak barrels. A costly undertaking, but one that demonstrates the excellent quality. In the aging system with soleras and criaderas, the Consejo Regulador uses three criaderas for Fino sherry. But that's not enough for Valdespino, as they make them for ten months, a uniquely long period that makes this Inocente Fino Sherry truly outstanding. The aging is also clearly noticeable in the aroma, with a richness of almond, yellow, and citrus fruit, along with hints of salty nuances. The taste is wonderfully fresh, a beautiful, delicate sherry, rich with nuts and herbs, along with a touch of minerality and lime freshness.
