This fantastic quality is reserved only for the top wines of Valdespino. Isabela Cream is world-famous and is made from two grape varieties: Palomino Fino, which accounts for two-thirds, with an addition of Pedro Ximenez. Valdespino's vineyards are unique and located in the Pago Macharnudo Alto in Jerez de la Frontera. This wine region is considered a Grand Cru for Sherry wines. The grapes grown in the old vineyards enjoy a fantastic climate. While the sun always allows the harvest to ripen easily, the vineyards are also subject to strong ocean breezes. This constant wind brings freshness to the harvest, and the grapes retain their natural freshness. The soil structure is crucial and contains a lot of white, chalky Albariza, for which the region is known. Once the harvest is ripe, all the bunches are harvested by hand. This Isabela Cream then undergoes a long aging process in the Valdespino cellars. The entire sherry undergoes oxidative aging for up to ten years, including at least five years spent in oak barrels. The solera system is used to achieve this full aroma and flavor.
