The label already states it: 6 months of oak aging. But before that happens, the Verdejo bunches ripen on very old trunks. These are planted in a very strong soil structure with plenty of lime and gravel. After a long and balanced growing season, the bunches are harvested at night. This prevents bruising during transport to Valmoro and allows the bunches to retain their freshness. Once the bunches are brought in, they are thoroughly inspected.
