Quality wines from Venturini Baldini

The Venturini Baldini quality winery was founded in 1976 in the hills between Parma and Reggio Emilia on a historic estate dating back to the early 16th century. It is now one of the oldest producers of Lambrusco and sparkling wine in the Italian Emilia region. Since 2015, it has been owned by Julia and Giuseppe Prestia, who have embarked on a project to relaunch the entire structure and significantly enhance the area and its wines. In addition to the award-winning rosé sparkling wine, Cadelvento Rosé, a new wine is debuting, expanding the range: Cadelvento Blanc de Blancs. The vineyards are located in the hills between Parma and Reggio Emilia at an altitude of 370 meters. Here, a perfect microclimate prevails for vine growth. The sun pierces the winter fog, and the cool breeze tempers the summer heat. The 130-hectare estate, comprising 30 hectares of vineyards, woods, and pastures, was among the first in Emilia Romagna to achieve organic certification.

The vinification process of Cadelvento Blanc de Blancs

This white wine is made entirely from Chardonnay grapes grown on sandy and clay soils. This allows the Chardonnay grapes to develop a unique character. The grapes are gently pressed in the cellar, followed by temperature-controlled fermentation. A second fermentation takes place using the Long Charmat method, lasting six months. The Cadelvento Blanc de Blancs is a pale yellow wine with a delicate aroma of floral notes and aromatic herbs. The palate is balanced and pleasantly soft with a wonderfully fresh character. It pairs beautifully with shellfish or fish soup.
