Manual harvest for Venturini Baldini Cadelvento Spumante Rose
In 1976, Beatrice Baldini and Carlo Venturini purchased the historic 17th-century Roncolo estate. The couple began pursuing their dream of producing wines in harmony with nature in the adjoining, magnificent Villa Manodori, its historic cellars, and its 35 hectares of vineyards. The vineyards, nestled on the hills between Parma and Reggio Emilia, are designed for premium grape quality. On sandy and loamy soils oriented southeast-southwest, an excellent climate prevails between the rows of vines. At 300-400 meters above sea level, the sun pierces the winter fog, and the cool green of the forest softens the summer heat. For over 40 years, primarily Lambrusco varietals have been hand-harvested from these vineyards.
Cadelvento Spumante Rosé is produced from clones of Lambrusco Sorbara and Grasparossa, harvested in the first ten days of September. After harvesting, the grapes are transported to the winery for a gentle pressing. The first fermentation at controlled temperatures is followed by a second fermentation in steel autoclaves according to the Charmat method.
