The harvest of the Veuve du Vernay Brut

When the three grape varieties are ripe and have the perfect balance of sugars and acidity, they are harvested. Upon arrival, they are gently pressed, and still white wine is first made. Jean-Jacques Hochet then adjusts the blend's ratio and ferments it again with sugar to create the beautiful bubbles. After a long aging period in the Veuve du Vernay cellars, the sparkling wine is ready to be opened.
