Villa Conchi is a Spanish winery founded in 1993 by Javier Ruiz de Galarreta. His goal was to bring high-quality Spanish wines to the export market, thus capitalizing on the potential of family bodegas. Twenty years later, Javier has selected modern facilities and found perfect vineyards to produce his unique Cava. But Villa Conchi is known not only for its modern and elegant Cava, but also for the elegance and distinction that Conchi has always inspired. The vineyards where the grapes for the Cava are grown are located in the heart of the Penedès region. The combination of modern technology and traditional methods produces an elegant and fresh sparkling wine that showcases the best of Spain.
The Trepat grapes are harvested at night due to the cooler temperatures. At the winery, the grapes are cooled and then pressed. The wine is then fermented at a controlled temperature to preserve its beautiful aromas. After the second fermentation, the wine is aged in the bottle for at least 12 months to achieve Cava de Guarda status. This takes place in underground cellars at a constant temperature of 15 to 17 degrees Celsius, where the wine remains in contact with the lees. Finally, the liqueur d'expedition is added to determine the final sweetness level. An extensive vinification process leads to this beautiful Cava Blush Rosé.
