Where exactly is Toro located?

The protected designation of origin DO Toro is situated on the western plateau of Castilla y León, north and south of the Duero river. The protected wine region covers 62,000 hectares and spans the provinces of Zamora and Valladolid. Consequently, the official wine region is significantly smaller than the city of Toro, the province of Zamora, or the entire Castilla y León region.[1]

In Zamora, the demarcation includes Argujillo, La Bóveda de Toro, Morales de Toro, El Pego, Peleagonzalo, El Piñero, San Miguel de la Ribera, Sanzoles, Toro, Valdefinjas, Venialbo, and Villabuena del Puente. In Valladolid, San Román de Hornija and Villafranca del Duero belong entirely to the DO; in Pedrosa del Rey, only the demarcated plots Villaester de Arriba and Villaester de Abajo fall under it. The official Spanish text refers to such plots as pagos.[2]

Which areas make up the DO?

Castilla y León is the overarching geographical region, but not an overarching wine appellation. The official demarcation includes parts of the natural areas of Tierra del Vino, Valle del Guareña, and Tierra de Toro.[3]

How large and active is DO Toro?

In 2025, 5,520 hectares of vineyards were registered with the regulatory council.[4] Official national DO statistics report 63 registered wineries for the 2023/2024 campaign: 58 bottlers and 5 non-bottlers. During that same campaign, 151,876.22 hectoliters of wine were qualified for the DO. Mathematically, that volume corresponds to approximately 20.3 million 0.75-liter bottles (151,876.22 × 100 ÷ 0.75); this is not a count of actual filled bottles.[5]

The official planting survey for 2023 covers 5,432.2648 hectares. Tinta de Toro represented 91.9% of that area, Malvasía Castellana 3.5%, Garnacha Tinta 2.1%, and Verdejo 2.1%. The percentages were calculated based on the published hectares per grape variety, with 5,432.2648 hectares as the denominator, and rounded to one decimal place. On the same basis, the plantings consisted of 94.0% red and 6.0% white grapes.[6]

Based on official national cartography at a scale of 1:25,000, updated in March 2014, the geographical bounding box of the DO is estimated to measure approximately 39 kilometers from east to west and 35 kilometers from north to south. These are axis-aligned map distances calculated from the extreme coordinates and rounded to whole kilometers; they are not road distances.[7]

How do altitude, climate, and soil shape the vineyards?

The vineyards are situated at an altitude of 620 to 840 meters. The climate is strongly continental with Atlantic influence: dry conditions, hot summer days, cold winters, and a large temperature difference between day and night during the ripening season. The official product specification mentions an average of 350 to 400 millimeters of rainfall per year and 2,600 to 3,000 hours of sunshine.[8]

Many soils are sandy to sandy-loam, low in organic matter, and rich in iron. Additionally, clay, calcareous conglomerate, and sandstone are present. That combination of altitude, aridity, and permeable soil helps explain why old plots have been preserved. According to the product specification, more than half of the vineyards are over forty years old, and there are still vines remaining from before the arrival of phylloxera.[9]

Which grapes and wine styles are permitted?

Tinta de Toro is the primary red grape; Garnacha Tinta is also permitted. For white wine, Malvasía Castellana, Verdejo, Moscatel de Grano Menudo, and Albillo Real are included. The DO encompasses still white, rosé, and red wine, as well as high-quality sparkling wine produced according to the traditional method, with a minimum of nine months of aging on the lees.[10]

Listing a grape name on the label requires that at least 85% of the wine comes from that variety. The regulations also establish separate maximum yields: 7,500 kilograms per hectare for Tinta de Toro and 9,000 kilograms per hectare for the other permitted varieties.[11]

How was the protected designation of origin established?

Toro has a long history of viticulture, but the protected designation of origin is the guiding authority for current demarcations and product regulations. The Spanish Denominación de Origen, or protected designation of origin, was recognized on May 29, 1987. Management lies with the regulatory council, the Consejo Regulador; official oversight is provided by the agricultural technological institute, Instituto Tecnológico Agrario de Castilla y León.[12]
