Man, what a gem this Sancerre from Pascal Jolivet is! And for good reason, because respect for nature is paramount. The Sauvignon Blanc vineyards receive a great deal of attention, allowing the grapes to develop into some of the Loire's finest. After being harvested by hand, the grapes are selected and then quickly pressed to preserve their flavor and terroir.

Let nature take its course

The wines from this estate are pure and beautifully balanced. Pascal Jolivet grew up as the son of the cellar master of Château de Tracy in Pouilly Fumé. Winemaking was instilled in him from an early age, and he wanted nothing more than to do the same when he was old enough. So, in 1987, he founded his Pascal Jolivet estate. He owns most of his vineyards in Sancerre, eight hectares in Pouilly Fumé, and now also fifty hectares in Touraine. His winemaking method—letting nature take its course—results in pure wines with fruit, length, and minerality.

The philosophy of Pascal Jolivet

Pascal Jolivet's philosophy is to use only well-ripened grapes and to let nature take its course during vinification. The grapes' natural yeast cells do the work. Adding artificial yeast cultures is strictly prohibited. This lengthens the fermentation period for the grape sugars. This choice results in pure wines. The grapes from the three different terroirs are individually vinified to bring out their specific characteristics. Finally, the wines are aged for several months. Pascal Jolivet wines are sold worldwide and are featured on the wine lists of many Michelin-starred restaurants in France. The aroma is a true Sancerre, with minerals, citrus fruit, apple, and a hint of flint. The palate is perfectly balanced; lovely freshness and refined acidity make this Pascal Jolivet absolutely fantastic!
