Location / Origin: Puligny Montrachet occupies the central geographical position between Meursault to the north and Chassagne Montrachet to the south, three villages that together are among the great names for white Burgundy.
Appellation: The wine comes from the Puligny Montrachet appellation, a Village appellation with worldwide fame thanks to vineyards like Montrachet, Chevalier Montrachet, and Bâtard Montrachet.
Name & history: The original village name Puligny comes from Puliniacus, a Gallo-Roman military settlement. Montrachet was later added to the name to emphasize the quality of the local vineyards.
Soil: The vines grow on limestone and scree, a rocky soil with good drainage that contributes to tension, precision, and a mineral impression.
Vineyard & Harvest: The vines are on average 30 years old, yields are around 45 hl/ha, and the grapes are harvested by hand.
Vinification and aging
The aging is classic Burgundian, with oak usage supporting the Chardonnay without masking its freshness.
Fermentation: Fermentation traditionally takes place in oak barrels with full malolactic conversion. What is malolactic conversion? This process converts sharper malic acid into softer lactic acid, making the wine feel rounder and creamier.
Aging / Oak aging: The wine ages for 8–10 months in French oak barrels from Louis Latour's own cooperage, 15% of which are new and medium-toasted. This imparts subtle notes of toast and spice, while preserving the fresh fruit expression and mineral tension.
