For this white wine, we travel to the south of France, specifically to the Cotes de Gascogne region. There, Palombe's old vineyards are filled with Colombard and Sauvignon Blanc grapes, which together produce this white wine. But before that happens, Palombe's winemaker has a lot of work to do. He dedicates a great deal of time to the vineyards in the Cotes de Gascogne region. This results in a full and powerful harvest, but that's also thanks to the perfect climate in the vineyard. The Colombard and Sauvignon Blanc grapes receive plenty of sunshine in the region, allowing them to ripen evenly. The fresh mountain breeze cools the bunches, ensuring they retain their natural freshness. Because the vineyard is situated at a higher altitude, the dew also cools the white grapes at night.

Early in the season, the Colombard and Sauvignon grapes are harvested early in the morning to protect them from transport and preserve their natural freshness. When the white grapes arrive at the Palombe winery, they are carefully selected to bottle only the finest bunches. After a short, gentle pressing, the Palombe white wine is aged in the cellars for several weeks. This wine can develop in peace, and the Colombard and Sauvignon grapes blend seamlessly.

The aroma and taste of the white Palombe wine

As soon as the bottle is capped, we immediately smell a beautiful, lively aroma of green apple, pear, and a hint of lime. In the glass, we see a light yellow color with green glints, and the aromas are fully released. Nuances of lime, passion fruit, and grapefruit are appealing. The clean taste creates a fresh mouthfeel on the tongue, with plenty of citrus fruit and a hint of passion fruit. On the back of the tongue, this white wine offers even more beautiful flavor impressions of pear and grapefruit. A lovely, slightly dry finish completes the whole experience, and it's no wonder this white wine is often served as a house wine in fine restaurants.
