In 1989, the Domini Veneti company was founded by Cantina Valpolicella Negrar, a historic winery established in Verona in 1933. With an ambitious project to enhance the quality of Valpolicella Classica by selecting specific areas, the Domini Veneti line was launched. Known for its outstanding production of Valpolicella Classica DOCG and DOC, as well as other high-quality Verona wines, Domini Veneti is a brand that reflects authenticity and refinement, representing the most honest expression of a specific area, both geographically and historically. Domini Veneti Pruviniano Appassimento is a wine primarily produced in the Verona region at an altitude of between 100 and 350 meters above sea level. The soil where the vines grow varies from limestone to clay, and the soil is cultivated using the row technique with a double pergola training system. The vines used are between 20 and 25 years old. The harvest takes place in the second decade of September and is carried out exclusively by hand. During the vinification process, the grapes are dried for 60 days to achieve greater concentration. They are then destemmed and gently pressed pneumatically. The temperature during fermentation is 25 degrees Celsius, and maceration lasts 10 days with scheduled punching three times a day for 20 minutes. After malolactic fermentation, the wine is ready for aging in oak. Stabilization occurs naturally, without the addition of any chemicals.

The Domini Veneti Pruviniano Appassimento is a ruby-red wine with hints of garnet. It has a spicy aroma, dominated by notes of vanilla and cherry. On the palate, it is full, round, and supple, with soft tannins that create a comfortable mouthfeel. It has a long finish, with spicy notes that make for a refreshing and pleasant experience.
