Perdeberg Cellar is a renowned winery located in the Paarl region of South Africa. The winery has a rich history dating back to 1941, when a group of winegrowers decided to collaborate and process their grapes into quality wines. Today, Perdeberg Cellar is known for its dedication to excellence and producing high-quality wines. The grapes for this wine were hand-harvested in late February from vineyards located in the Agter-Paarl region. The vineyard's soil consists primarily of decomposed granite, which contributes to the wine's distinctive characteristics. The vineyards are bush vine-planted and cultivated without the addition of irrigation water. These dry conditions result in smaller berries with concentrated flavors and aromas. After destemming the grapes, they are carefully sorted to select only the finest fruit for wine production. The grapes then undergo a 48-hour cold maceration, during which the skins remain in contact with the juice to ensure maximum color and flavor extraction. Fermentation takes place in stainless steel tanks, with regular pumpovers over a period of five days. This process contributes to the optimal extraction of aromas and tannins. After fermentation, the wine is transferred to French oak barrels, where it ages for 12 months. This imparts subtle oak influences and adds complexity to the wine.
