5 months of maturation for Silva Daponte Mencia

José Chaves founded the Chaves winery in 1955 at the westernmost tip of the Atlantic Ocean. The same love of wine was passed down from generation to generation. In 1986, the winery was among the first to release wines protected by the "Vinos de la Tierra" designation, guaranteeing the origin of Albariño del Salnés. With this, they clearly put wines from the Rías Baixas region on the map. Today, the third generation proudly heads the highly successful Chaves winery. At peak ripeness, the grapes are harvested entirely by hand. This allows for rigorous selection in the vineyard itself, guaranteeing high quality. The grapes are transported to the winery in small crates, where fermentation takes place at a controlled temperature. Finally, the wine matures for another five months in stainless steel tanks before bottling.
