This is MVSA's flagship wine, a cava of unparalleled greatness with a very refined mousse. MVSA's winemaker wanted to create a cava that would rival many French Champagnes, and he certainly succeeded. But before that happened, a great deal of work had to be done. The oldest vineyards in the heart of Penedes are in top condition and produce very strong bunches. Their deep roots allow them to absorb a great deal of energy from the rich soil, aiming to produce a full bunch. The climate is also crucial, as the old vines are situated in a unique location. The abundant sunshine from the south-facing slopes gives the grapes a richness. The fresh breeze provides cooling during hot summer days and lends the grapes a natural freshness. This Reserva is also made with Macabeo, Xarel-Lo, and Parellada grapes.
