The origin, grapes and craftsmanship behind this wine.

This wine features Montalcino's most important grape, Sangiovese, in the spotlight. The result is this magnificent San Polo Rubio wine, an ode to tradition, innovation, and sublime winemaking. With every sip of San Polo Rubio, you're transported to the sun-drenched Tuscan landscape, where age-old traditions seamlessly blend with contemporary innovations.

San Polo is fully committed to sustainability and environmental awareness, a commitment clearly reflected in every sip of this wine. The grapes are carefully cultivated in Montalcino's unique microclimate and then transformed into a wine overflowing with character and depth. San Polo Rubio is a pleasant surprise with its vibrant fruity aromas and subtle spicy notes. The Sangiovese grapes are harvested entirely by hand at peak ripeness and then transported directly to the winery in crates. In the cellar, the grapes undergo a gentle pressing. Before fermentation, the grapes are cooled, resulting in stronger aromas and more flavor. Fermentation takes place in specially designed, conical, refrigerated stainless steel tanks to maintain a controlled fermentation temperature. The wine is then aged in stainless steel tanks for a further 10 months. Finally, the wine is aged in bottle for another 4 months before release.

Rubio emerges in the glass with a brilliant ruby red color. The aroma is delightful and enticing, with fresh aromas of juicy cherries, delicate violets, and ripe blackberries. These are harmoniously complemented by soft spicy notes. The palate of Rubio is well-structured and balanced, with pleasant tannins providing a supple texture. The combination of fruity vibrancy, spicy notes, and well-integrated tannins makes this wine a delight for lovers of fine wines.
